Executive Chef Shaun Zwarun is Glace Bay born and bred and was lured into the culinary world by helping his father prepare food for his family and gatherings from a young age. Learning the basics of skill in his trade from NSCC Marconi Campus working and learning with passionate chefs that lit a fire within him to continue his culinary journey and helped him learn skills he still uses today.
Shaun continued his flavourful learning journey throughout many of the Atlantic Provinces and even all the way across the Country in Victoria B.C. creating culinary delights for folks to enjoy across Canada, Shaun has had the opportunities to compete in various competitions and even had additional training in Alberta and even New York.
His culinary philosophy of local produce first and passion for fresh ingredients reflects the growing shift towards a healthy more organic lifestyle while supporting local. Working with surrounding venders and farmers to seek out the finest in regional and local produce is the essence of his cuisine.
Shauns’s preference is to allow the natural flavours of food to express themselves. Grown by farmers and inspired by the most beautiful final product.
